Salmon with Cheesy Pasta and Spinach
Servings: 4
Ingredients:
4 - 4oz pieces of Salmon Fillet
1 clove Garlic, chopped
1 Roasted Red Pepper, diced
1/4 small onion, finely diced
1/2 cup Feta Cheese (reduced fat)
3 oz Whole Wheat Angel Hair Pasta
1/4 cup Parmesan Romano Cheese blend
Salt & Pepper
PAM cooking spray
Fresh Spinach (as much as you want, remember it wilts down to nothing)
Directions:
Set oven to broil
Place Salmon fillet on broiler pan, salt and pepper to taste and place in oven.
Next boil water for pasta, cook pasta.
While pasta is cooking heat sauté pan to med-med/high, spray with PAM and add onion and garlic. Once the onions start to turn clear add in your roasted red peppers and let that cook for about 3 minutes, stirring regularly so that contents do not stick to pan. Next add your spinach, this will wilt down so it is ok if it seems to be over flowing the pan at first. I added a couple of spoonful's of hot pasta water to the mix to give some liquid. Stir regularly so your spinach does not burn.
Check your Salmon! ( I need notes like this sometimes when I am following a recipe)
Your pasta should be about done at this point so drain the pasta, DO NOT RINSE. Place drained pasta back in hot pasta pot, don't forget to stir your spinach, add the Parmesan/Romano cheese blend to the pasta and stir.
Your salmon should be about done at this point. To test salmon I have always placed a fork in the center of the thickest piece and twisted, if it flakes, and also doesn't look raw then it is done. Everyone has a different taste for their doneness, or temperature, so make sure you watch it closely.
At this point your Spinach should be cooked down, I wondered where my spinach disappeared too, next time I will be cooking a lot more spinach. So once the spinach was all cooked down I added the feta cheese to the pan, stirring. Let the feta melt a bit, but not all the way. You can also save some for garnishing, like the picture.
To plate layer pasta then salmon topped with spinach. You can serve it separate, but presentation is the key to any good meal.
